THANKSGIVING LEFTOVERS TURNIP CAKE
Preheat the oven to 375°F.
Grate 2 cups of turnips and squeeze out any excess liquid.
Mix the grated turnips with leftover mashed potatoes, stuffing, and diced turkey.
Add in beaten eggs, flour, and baking powder to the mixture.
Pour the mixture into a greased baking dish and bake for 45-50 minutes.
Let the turnip cake cool for a few minutes before slicing and serving.
Garnish with fresh herbs and enjoy!
