ONE POT CHICKEN AND RICE RECIPE

Start by heating oil in a large pot or Dutch oven over medium-high heat.

Add diced onion and cook until softened, then add minced garlic and cook for another minute.

Add boneless, skinless chicken thighs and cook until browned on both sides.

Stir in uncooked rice, chicken broth, diced tomatoes, and your choice of seasonings.
