CORNMEAL-CRUSTED COD RECIPE
Preheat the oven to 400°F.
Mix cornmeal, flour, salt, and pepper in a shallow dish.
Dip each cod fillet in the mixture, coating both sides.
Heat oil in a large skillet over medium-high heat.
Add the cod fillets and cook for 2-3 minutes on each side until golden brown.
Transfer the cod to a baking sheet and bake for 10-12 minutes until cooked through.
Serve hot with lemon wedges and tartar sauce.
