ROASTED NEW RED POTATOES RECIPE

Preheat oven to 400°F.

Wash and dry 2 pounds of new red potatoes.

Cut potatoes into quarters and place in a large bowl.

Drizzle with 2 tablespoons of olive oil and sprinkle with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Toss potatoes until evenly coated with oil and seasoning.

Spread potatoes out on a baking sheet and roast for 30-35 minutes, or until golden brown and crispy.
