CHOCOLATE-PEANUT BUTTER MINI CUPCAKES

Preheat oven to 350°F and line mini cupcake tin with liners.

In a mixing bowl, cream together butter and sugar until light and fluffy.

Add in eggs one at a time, mixing well after each addition.

Mix in vanilla extract, cocoa powder, flour, baking powder, and salt until well combined.

Fold in chopped peanuts and spoon batter into prepared cupcake liners.

Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.

Let cool before frosting with peanut butter frosting and serving.
