ALMOST NO-OIL PAN FRIED EGGPLANT
Cut eggplant into thin slices.
Sprinkle salt on both sides of the eggplant slices and let them sit for 10 minutes
Rinse the eggplant slices and pat them dry with a paper towel.
Heat a non-stick pan over medium-high heat.
Place the eggplant slices in the pan and cook for 2-3 minutes on each side until golden brown.
Serve hot with your favorite dipping sauce or as a side dish.
